My Comfort Food
I’m sure everyone with a restricted diet can relate to sometimes succumbing to repetitive meals simply because its easier and is much less of a hassle. And if your diet is constrained due to medical factors, then it becomes even harder to maintain enough nutrients in your body. I’ve been struggling with this for years now, as someone with Crohn’s Disease who isn’t allowed any vegetables whatsoever some creativity is required to still maintain enthusiasm for food.
That’s why I’ve decided to share my easy recipes with you so you too can enjoy a hearty, lovely meal that is healthy as well. This one’s my favourite and it literally takes fifteen minutes to make. The salmon is marinated in soy sauce for an hour, five minutes or a few seconds it tastes just as good! Once the salmon is well coated with soy sauce, be sure to use dark soy cos that’s what gives it the colour and glistering shine. Start cooking the salmon skin-side down, on a pan with some olive oil while you poach the egg (I’ve talked in detail about how to poach an egg in one of my other posts you can find here). When the salmon turns translucent, turn it over and that’s mostly because I like it crispy on top too.
Voila! There’s a lovely soy glazed salmon with poached egg, the gooeyness of the egg alongside a crispy yet soft salmon in that dark soy feels like pure pleasure. What’s more? Salmon is rich in Omega-3s that have proven to soothe any IBS symptom. It is literally THE most simply meal I have ever prepared which doesn’t compromise on the taste.
